Supreme delicious salad
3 cups fresh baby spinach
100 g Mejdoul dates or similar
1 medium red onion
100 g flat bread
80 g almonds
3 tbsp olive oil
2 tsp Sumac
½ tsp chili flakes
1 tsp white wine vinegar
½ lemon

spit the dates and slice longwise, thinly chop the onion into a half-moon shape.
place in a bowl and mix with 1 pinch of salt and vinegar, let marinate for 15 minutes then strain.

in a hot pan saute the almonds with the butter for a couple of minutes
tear the flatbread into small pieces, around 3x3 cm then add.
toss and toast till the bread is golden add a pinch of salt and the sumac.
set aside to cool

season with some salt, lemon juice, and olive oil.
