Dough
 250 g Semolina
 150 g Butter
 85 g Flour
 1 tbsp Sugar
 80 ml Milk
optional - traditional flavoring
 2 tsp Mahleb
 0.50 tsp Mastix - powdered
Filling
 400 g Date paste
 100 g Walnuts
 1 tsp Cinnamon

melt the butter then mix well with the Semolina thill combined, forming a ball.
for best practices, cover and let it rest overnight at room temperature.
otherwise, let it rest for 1-2 hours.

roughly chop the walnuts, mix with the date paste, and cinnamon.

after the dough has rested, add the milk and gently combine it to the dough - do not work it!
then add the same way the flour and flavoring.
let rest another 10 Minutes

divide the dough into 12g small balls, and the Date paste mix into 10g balls.

using your fingers, flatten the dough balls and shape them into a pocket, place the Date paste ball inside then seal.
work it and shape again into a ball.

preheat the oven to 160°C.
Traditionally a wooden cookie form would be used, dust it with flour, place the stuffed ball, and press to shape.
set on a Tray with parchment paper.
in no form is found, slightly flatten the cookies.

bake for 15 Minutes or until the cookie bottom is slightly golden.
take out and let cool completely.
before serving dust with powdered sugar and Enjoy 🤗
