finely chop the onion and saute in a pan on medium heat with 2 tbsp olive oil.
remove leaves from stems, chop finely.
crack all the eggs in a bowl and beat using a fork then add the herbs, sauteed onions, salt, pepper, cumin, roses, or any extras and baking powder
mix all well.
in a pan on medium heat, add the rest of the olive oil and pour in the omelet mixture,
cook for 5 minutes then cover and cook another 5 minutes.
finishing in a grill oven for a couple of minutes.
