simple yet complex with flavors
100 g medium Bulgur
100 ml water
½ tsp curry spices
½ tsp salt
1 small onion
1 garlic clove
5 dried tomatoes
½ bunch of herbs, parsley & coriander
2 tbsp pumpkin seeds or other nuts
3 tbsp olive oil
2 tbsp apple vinegar
2 tbsp raisins

in a small pot add the bulgur, curry spices, salt and mix, then add the water and bring to a boil then cover.
set aside covered for 10 minutes then let it cool

roughly dice the onions and saute in a pan on high heat for 2 minutes with 1 tbsp olive oil, then add smashed and chopped garlic saute another 2 minutes.
slice the dried tomatoes and add also, mix all well saute another 2 minutes and remove from heat.

roughly chop the parsley and coriander, add to a bowl along with the cooled bulgur, sautee onions mix, raisins, vinegar, and the rest of the olive oil then mix.
let marinate for 2-5 minutes. taste and adjust as needed
