Moroccan style carrot salad
6 medium carrots
3 garlic cloves
3 tbsp olive oil
4 tbsp lemon juice
½ tsp turmeric
½ tsp cumin
1 tbsp Harissa or other chili paste
½ cup chopped coriander
½ tsp sugar *optional
salt and pepper

cut the carrots into 1/2 cm round-shaped pieces, cook in pre-boiled salted water for about 7-10 minutes,
until they are slightly soft, strain "do not wash" and set in a bowl.

while the carrots are still hot add all the ingredients and mix gently.
let it cool and marinate, best used after 1 hour. Enjoy
